I had my gallbladder out a week ago. I have to eat very low fat and reintroduce fats slowly to see how my body reacts and what it can tolerate. I'm looking for some new yummy, high fiber, low fat recipes to try. If you have some faves you'd like to share, please do! I shared a recipe I tried last night -- a lentil orzo soup -- in the soup section. It was so good.

Salsa chicken. You can use leftovers from roasted or poached chicken. Fry chopped onions and peppers in a little oil, add chicken pieces, add salsa (any kind you like, we are spice wimps so it's mild for us), add pinto or black beans (or not), simmer for a few mins, add cilantro (or not, you could add green onions instead). I usually serve over rice or we add to tortillas with avocado, cheese, extra tomato, sometimes sour cream. Of course, you would have to leave off all the fatty stuff for now but it should still be edible.

I'm not sure about the fiber content, but we have been eating the same soup the last 3 Sunday, basically because we love it, and everyone eats the leftovers. Below is a picture of some of the ingredients from tonight - diced sweet yellow onions, red and yellow peppers, cabbage, green beans, carrots (cut into disks), and squash. Not pictured is the chicken breast, spring onions, cilantro, celery. and Adobo seasoning. The soup has so little fat, there is literally nothing to skim from the top.

^^^^^^ that looks delicious. i was going to suggest something similar. i make a similar soup but i like to add cilantro stems to the broth for flavour and i love adding lime juice to my bowl before eating. delicious eaten with warm corn tortillas. another good one is this rice and fish soup my spanish friend used to make. i'll usually crave it at least once every winter. she would use a whole white fish (ask for a white fish that is a little firm and won't totally fall apart in the soup, like hake or bass) and take off the meat, and then first make a simple broth using the fish head and bones and any other white fish heads (fishmongers will usually sell you bones and heads for very cheap or even give them to you free), then when that was done she would add any veggies and when that was almost done, add the fish meat cut into cubes and cook until done (this is pretty quick) and cooked rice and voilĂ . you can tweak the recipe and add other veggies, or other seafood, or omit the rice if you want to make it lighter. there isn't really a recipe but i found this that is very similar for a fish soup from southern spain, which is where my friend is from. there's no rice in this one but that's easy to add. white fish is pretty low in fat and then the recipe only calls for some olive oil and you can use even less than the recipe calls for. i like to add a little cilantro and lemon and my spanish friend would probably think the cilantro is a travesty but i swear it's delicious. visitsouthernspain.com/spanish-fish-soup-recipe/
