Mr. Tulip and I went for a little weekend getaway a few weeks ago to a tiny town in Wisconsin, which apparently is the "Cheese Captital of the World." They apparently product 10-15% of the world's cheese. Thought this was a dubious distinction at first, but we came to learn that the headquarters for Sargento is there, which explains the volume. Of course, being Wisconsin there are some local dairies that produce cheese as well. The town has a Cheese Heritage Center. Ha! We bought some yummy local cheeses. I had an aunt and uncle and cousin who lived in Madison, Wisconsin. Every year, they would send this container of spreadable cheddar cheese to us via The Wisconsin Cheeseman (www.wisconsincheeseman.com). It was freaking amazing. Very high quality and amazing flavor. I just checked and they are still around and very affordable -- compared to other places like Harry and Davis. Also, when I was a kid and we visited them in Wisconsin, when we ordered a cheeseburger, they were the only place that had restaurants that asked you what kind of cheese you wanted on the burger (not just "American"). There were at least 4 different kinds.

If you have a chance to try Shullsburg Dairy or Henning's cheeses, I recommend them.
